Easy Braised Chicken & Potatoes (Huang Men Ji, simplified)
The dish behind China's biggest chicken-rice chain, simplified to one pot and six ingredients.
The story
Huang men ji became a national obsession in China the way poke did in the US — glossy braised chicken and potatoes over rice, sauce everywhere. Home versions are legitimately easy: brown, braise, done. The potatoes thicken the sauce as they break down.
Ingredients (7 + pantry staples)
- Boneless chicken thighs — 1.5 lb / 700 g, chunked
- Potatoes — 1 lb / 450 g, chunked
- Green bell pepper — 1, chunked
- Soy sauce — 3 tbsp
- Dark soy sauce — 1 tsp (optional)
- Garlic — 4 cloves, smashed
- Ginger — 3 slices
Pantry staples used (don't count toward the 6): sugar (1 tsp), cooking oil. Not stocked yet? See the pantry page.
Steps
- Brown chicken in oil with garlic and ginger, 5 minutes.
- Add soy sauces, sugar and 1.5 cups / 350 ml hot water; simmer 15 minutes.
- Add potatoes; simmer 10 minutes until tender and the sauce is glossy. Peppers in for the last 2. Serve over rice.
Swaps
Chicken breast dries out — thighs only. Mushroom + tofu version follows the same braising math for a vegetarian pot.
